- 1 round loaf of bread
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 pound seafood mix (such as shrimp, scallops, and crab)
- 4 cups seafood stock
- 1 cup heavy cream
- 1 cup sliced mushrooms
- 1 cup diced tomatoes
- 2 cups spinach
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the top off the bread loaf and hollow out the inside, leaving about a 1-inch thick shell.
- In a large pot, heat the olive oil over medium heat. Add the chopped onions and minced garlic, sautéing until translucent (about 3-5 minutes).
- Add the seafood mix to the pot and cook until just opaque, about 3-4 minutes.
- Pour in the seafood stock and add the heavy cream, sliced mushrooms, diced tomatoes, and spinach. Season with salt and pepper to taste.
- Allow the mixture to simmer for 10-15 minutes, stirring occasionally until it thickens.
- Spoon the seafood mixture generously into the hollowed bread bowl.
- Place the filled bread bowl on a baking sheet and bake for 15-20 minutes or until the bread is crispy and golden.
- Garnish with chopped parsley before serving.
Notes
For a lighter option, swap heavy cream for coconut milk. Consider adding a splash of white wine for extra depth.
