  • 1 round loaf of bread
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 pound seafood mix (such as shrimp, scallops, and crab)
  • 4 cups seafood stock
  • 1 cup heavy cream
  • 1 cup sliced mushrooms
  • 1 cup diced tomatoes
  • 2 cups spinach
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the top off the bread loaf and hollow out the inside, leaving about a 1-inch thick shell.
  3. In a large pot, heat the olive oil over medium heat. Add the chopped onions and minced garlic, sautéing until translucent (about 3-5 minutes).
  4. Add the seafood mix to the pot and cook until just opaque, about 3-4 minutes.
  5. Pour in the seafood stock and add the heavy cream, sliced mushrooms, diced tomatoes, and spinach. Season with salt and pepper to taste.
  6. Allow the mixture to simmer for 10-15 minutes, stirring occasionally until it thickens.
  7. Spoon the seafood mixture generously into the hollowed bread bowl.
  8. Place the filled bread bowl on a baking sheet and bake for 15-20 minutes or until the bread is crispy and golden.
  9. Garnish with chopped parsley before serving.

Notes

For a lighter option, swap heavy cream for coconut milk. Consider adding a splash of white wine for extra depth.
