- 2 cups mashed sweet potatoes (about 2–3 medium sweet potatoes)
- 1 cup brown sugar
- 1/2 cup milk
- 1/2 cup butter, melted
- 2 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar (for crust)
- 1/2 cup butter, melted (for crust)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish lightly.
- In a medium bowl, mix together the graham cracker crumbs, 1/4 cup sugar, and 1/2 cup melted butter to form a crumbly crust. Press this mixture evenly into the bottom of the prepared baking dish.
- In a separate large bowl, combine the mashed sweet potatoes, brown sugar, milk, remaining melted butter, eggs, vanilla extract, cinnamon, nutmeg, and salt. Mix until smooth and creamy.
- Pour the sweet potato mixture over the crust in the baking dish, spreading it evenly.
- Bake in the preheated oven for 30-35 minutes, or until the center has set. Check doneness by inserting a toothpick; it should come out clean.
- Allow the bars to cool completely in the pan before cutting into squares or bars. Serve and enjoy!
Notes
These bars can be enhanced with a dollop of whipped cream or a sprinkle of crushed nuts.
