Flavor-packed Thai Chicken Bites, crispy on the outside and juicy on the inside, perfect for gatherings or casual meals.


Ingredients

  • 1 pound (450 g) boneless, skinless chicken breast, cut into bite-sized pieces
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon fresh lime juice (about half a lime)
  • 1 teaspoon red pepper flakes (adjust to taste)
  • 2 cloves garlic, minced
  • 1 tablespoon fresh cilantro, chopped
  • 2 tablespoons vegetable oil (for frying)
  • 1 tablespoon brown sugar or honey (optional)
  • 1 teaspoon grated ginger (optional)

Instructions

  1. In a bowl, whisk together the soy sauce, fish sauce, lime juice, red pepper flakes, minced garlic, and chopped cilantro.
  2. Add the chicken pieces to the marinade, toss to coat evenly, cover, and let sit for 30 minutes in the refrigerator.
  3. Heat 2 tablespoons of vegetable oil in a frying pan or skillet over medium heat.
  4. Remove the chicken from the marinade and let excess drip off. Add chicken to the hot pan in a single layer.
  5. Fry, turning occasionally, until golden brown and cooked through, about 5–7 minutes. Internal temperature should reach 165°F (74°C).
  6. Transfer to a plate lined with paper towels to rest for a minute, then serve hot.

Notes

For baking, brush with oil and bake at 425°F (220°C) for 12–15 minutes, flipping halfway. Use tamari or low-sodium soy sauce to reduce sodium if preferred.
