A cozy dish combining tender turkey meatballs with a rich pumpkin sage sauce, perfect for autumn gatherings.
Ingredients
Scale
- 1 pound ground turkey
- 1/2 cup bread crumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 1 can (15 ounces) pumpkin puree
- 1 cup chicken broth
- 1 tablespoon fresh sage, chopped (or 1 teaspoon dried sage)
- 1/2 teaspoon nutmeg
- 1/2 teaspoon cinnamon
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the ground turkey, bread crumbs, Parmesan cheese, egg, minced garlic, salt, and pepper. Mix gently until just combined.
- Shape the mixture into meatballs, about 1.5 inches in diameter, and place them evenly spaced on a baking sheet.
- Bake the meatballs for 20-25 minutes, until golden brown and cooked through.
- While the meatballs are baking, heat the olive oil in a saucepan over medium heat. Add the pumpkin puree, chicken broth, fresh sage, nutmeg, and cinnamon. Stir well and let it simmer for about 10 minutes.
- Serve the baked meatballs atop the pumpkin sage sauce or on the side.
Notes
Avoid overmixing the meatball mixture to prevent toughness. Test for doneness using a meat thermometer; look for an internal temperature of 165°F (74°C).
