  • 1 teaspoon vanilla extract
  • 2 tablespoons unsalted butter (about 28 g)

Instructions

  1. In a medium saucepan, whisk together the sugar, cocoa powder, cornstarch, and salt until combined and free of lumps.
  2. Gradually whisk in the milk until the mixture is smooth.
  3. Place the saucepan over medium heat and cook, whisking constantly, until the mixture thickens and begins to bubble (about 8–12 minutes).
  4. Remove from heat once it reaches a gentle boil and has thickened to a pudding consistency.
  5. Stir in the vanilla extract and butter until smooth.
  6. For a super-smooth texture, press the pudding through a fine-mesh sieve into a clean bowl (optional).
  7. To serve warm, dish into bowls immediately, or chill in the refrigerator for at least 2 hours before serving.

Avoid overcooking and ensure constant whisking to prevent lumps and scorching. Plastic wrap on the surface helps prevent a skin while chilling.
