- 1 teaspoon vanilla extract
- 2 tablespoons unsalted butter (about 28 g)
Instructions
- In a medium saucepan, whisk together the sugar, cocoa powder, cornstarch, and salt until combined and free of lumps.
- Gradually whisk in the milk until the mixture is smooth.
- Place the saucepan over medium heat and cook, whisking constantly, until the mixture thickens and begins to bubble (about 8–12 minutes).
- Remove from heat once it reaches a gentle boil and has thickened to a pudding consistency.
- Stir in the vanilla extract and butter until smooth.
- For a super-smooth texture, press the pudding through a fine-mesh sieve into a clean bowl (optional).
- To serve warm, dish into bowls immediately, or chill in the refrigerator for at least 2 hours before serving.
