Description

A cozy vegan delight featuring soft chickpeas, tender spinach, and a touch of fresh lemon; perfect for chilly evenings and casual gatherings.

Ingredients

Scale
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 4 cups fresh spinach, roughly chopped
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground turmeric
  • 4 cups vegetable broth
  • Salt and black pepper to taste
  • Juice of 1 lemon
  • Optional: Crushed red pepper flakes for heat, fresh parsley for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion, sautéing until soft and translucent, about 5-7 minutes.
  3. Stir in the minced garlic, cumin, and turmeric; cook until fragrant, about 1 minute.
  4. Add the chickpeas and vegetable broth to the pot. Bring to a simmer.
  5. Gradually stir in the chopped spinach, allowing it to wilt before adding more.
  6. Season with salt, black pepper, and optional crushed red pepper flakes. Let simmer for about 15-20 minutes.
  7. Just before serving, stir in the lemon juice for a fresh pop of flavor.
  8. Ladle into bowls, garnish with fresh parsley if desired, and enjoy warm!

Notes

Avoid overcooking the spinach; it should remain vibrant and tender. Adjust seasoning and spices according to your taste preferences.
