- 1 tablespoon miso paste
- 1 tablespoon soy sauce
- 1 teaspoon chili paste (or to taste)
- 1 cup sliced mushrooms
- 1 cup broccoli florets
- 1 carrot, julienned
- 2 green onions, sliced
- Fresh cilantro for garnish
Instructions
- In a large pot, heat the sesame oil over medium heat.
- Add the mushrooms, broccoli, and carrot, sautéing for about 5 minutes until they start to soften.
- Stir in the miso paste, soy sauce, and chili paste, mixing well to combine.
- Pour in the vegetable broth and bring to a simmer.
- Add the ramen noodles and cook according to package instructions, typically about 3-5 minutes.
- Once cooked, remove from heat and serve in bowls, garnished with green onions and cilantro.
Notes
Use high-quality vegetable broth for enhanced flavor. For added heat, finish with a sprinkle of chili flakes or a dash of Sriracha.
