- 2 green onions, sliced
- Sriracha or chili paste (to taste)
- Sesame seeds (for garnish)
Instructions
- In a large pot, heat the sesame oil over medium heat.
- Add the minced garlic and grated ginger, sauté for 1-2 minutes until fragrant.
- Stir in miso paste and vegetable broth, bringing it to a simmer.
- Add mixed vegetables and cook until tender, about 5-7 minutes.
- Meanwhile, cook ramen noodles according to package instructions; drain and set aside.
- Divide noodles among bowls and pour hot broth and vegetables over them.
- Add Sriracha or chili paste to taste.
- Garnish with sliced green onions and sesame seeds before serving.
Notes
For a richer broth, consider adding a splash of soy sauce or tamari while simmering. Adjust the spice level to your preference.
