- 1 pack of ramen noodles
- 1 cup sliced mushrooms
- 1 cup bok choy (or any leafy green)
- 1 carrot, julienned
- Green onions, for garnish
- Tofu or edamame (optional)
Instructions
- In a large pot, heat the sesame oil over medium heat.
- Add the sliced mushrooms and carrots, sautéing until softened.
- Stir in the miso paste, soy sauce, and sriracha until well combined.
- Pour in the vegetable broth and bring the mixture to a boil.
- Add the ramen noodles and cook according to package instructions.
- Stir in the bok choy and cook until just wilted, about 1-2 minutes.
- Serve hot, garnished with sliced green onions and tofu or edamame if desired.
