A refreshing mix of quinoa, vegetables, and feta cheese inspired by Jennifer Aniston’s favorite salad from ‘Friends.’
Ingredients

- 1 cup cooked quinoa
- 1 cup diced cucumber
- 1 cup diced bell peppers (any color)
- 1/2 cup diced red onion
- 1/2 cup feta cheese, crumbled
- 1/2 cup chopped parsley
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- Start by cooking the quinoa as per package instructions (rinsing and boiling for about 15 minutes). Let it cool.
- In a large bowl, combine the chilled quinoa, cucumber, bell peppers, red onion, feta cheese, and parsley.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper until well combined.
- Pour the dressing over the salad and gently toss to coat all the ingredients evenly.
- Serve immediately or chill in the refrigerator for 15 to 30 minutes to let the flavors meld before serving.
Notes
Always rinse quinoa before cooking for better flavor. Let the salad sit for at least 15 minutes after tossing with dressing for enhanced taste.
