- 1 cup wild rice
- 2 cups water or chicken broth
- 1 pound chicken breast, sliced
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- 1 bell pepper, sliced (any color)
- 1 cup broccoli florets
- 1 carrot, sliced
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- Salt and pepper to taste
Instructions
- Rinse the wild rice under cold water. In a pot, bring the water or chicken broth to a boil, add the wild rice, reduce heat, cover, and simmer for about 45-50 minutes until tender. Drain any excess liquid if necessary.
- In a large skillet or wok, heat the olive oil over medium-high heat. Add the sliced chicken breast and cook until no longer pink.
- Add the minced garlic and ginger, cooking for an additional minute until fragrant.
- Toss in the bell pepper, broccoli, and carrot. Stir-fry for about 5-7 minutes until the vegetables are tender-crisp.
- Add the cooked wild rice and soy sauce to the skillet, stirring to combine. Season with salt and pepper to taste.
- Cook for an additional 2-3 minutes until everything is heated through. Serve hot.
Notes
For extra flavor, consider adding a splash of lime juice or chopped nuts like cashews for added texture.
