- 1 pound beef chunks
- 2 medium zucchinis, sliced
- 1 onion, chopped
- 2 garlic cloves, minced
- 4 cups beef broth
- 1 can (14 ounces) diced tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- In a large pot, heat olive oil over medium heat until shimmering.
- Add the beef chunks and brown them on all sides, removing them from the pot once browned.
- In the same pot, add onion and garlic; sauté until softened and translucent (about 4–6 minutes).
- Stir in zucchinis and cook for a few minutes until they begin to soften.
- Add the browned beef back to the pot along with beef broth, diced tomatoes, oregano, salt, and pepper.
- Bring to a boil, then reduce heat and let simmer for 30–40 minutes until the beef is tender.
- Serve hot and enjoy your hearty one-pot meal!
Notes
For a lighter option, switch to leaner beef or turkey. Add mushrooms or lentils for extra body.
