Description

A delicious southwestern-inspired wrap filled with spicy baked tofu, fresh veggies, and a creamy homemade vegan ranch.


Ingredients

  • 16 oz block extra firm tofu (drained and pressed)
  • 1/31/2 cup cornstarch
  • 1/3 cup non-dairy milk (unsweetened, plain)
  • 1/4 tsp garlic powder
  • 1/4 tsp salt
  • 1/2 cup buffalo sauce
  • 23 cups romaine (chopped)
  • 1/2 cup shredded vegan cheddar (such as Follow Your Heart)
  • 1/2 cup matchstick carrots
  • 1 avocado (sliced)
  • 4 large tortillas (or gluten-free wraps)
  • 1 cup unsweetened almond milk yogurt (plain)
  • 2 tbsp lemon juice (fresh if possible)
  • 1 tbsp vinegar
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1 tbsp fresh dill (minced, or 1 tsp dried)
  • 1 tbsp fresh parsley (minced, or 1 tsp dried)

Instructions

  1. Preheat the oven to 400°F (204°C).
  2. Slice the tofu into 3-4 inch long strips, about 1.5-2 inches thick (you’ll have about 12-14 strips).
  3. Prepare the coating: On a plate, mix cornstarch, garlic powder, and salt. In a bowl, pour in the non-dairy milk.
  4. Coat the tofu: Dip each strip into the non-dairy milk, then coat with the cornstarch mixture.
  5. Arrange on a baking sheet lined with parchment paper and bake for 25 minutes, flipping halfway through for even crispness.
  6. Dip tofu in buffalo sauce: Once baked, dip each piece in buffalo sauce and allow the excess to drip off before placing it back on the baking sheet. Bake for an additional 5 minutes.
  7. Prepare the vegan ranch: In a mixing bowl, combine almond milk yogurt, lemon juice, vinegar, garlic powder, onion powder, salt, dill, and parsley. Whisk until smooth.
  8. Assemble the wrap: Spread a layer of the vegan ranch in the center of each tortilla. Add romaine, carrots, cheese, and avocado, then layer in your crispy buffalo tofu.
  9. Wrap it up: Tightly roll the tortilla by folding the ends in and rolling from the bottom. Optionally, grill your wrap on a pan for a few minutes for a crispy finish.

Notes

For the crispiest tofu, ensure that your tofu is well-pressed to remove moisture before seasoning and baking.
