- 1/2 cup water

- 1 cup fine cornmeal
- 1/2 cup all-purpose flour

- Vegetable oil (for frying)
- Lemon wedges (for garnish)
Instructions
- In a small bowl, whisk together milk, water, salt, and pepper.
- Pour the marinade into a shallow dish, add catfish fillets, and turn to coat. Let marinate for 10-15 minutes.
- In a large resealable bag, combine cornmeal, flour, and seafood seasoning.
- Remove fillets from the marinade, allowing excess liquid to drip off. Add fillets to the bag and shake to coat evenly.
- Pour vegetable oil into a deep fryer or heavy-bottomed pan and heat to 365°F (185°C).
- Carefully add 2-3 fillets to the hot oil at a time and fry for 3-4 minutes per side until golden brown.
- Remove fried catfish with a slotted spoon and drain on paper towels.
- Arrange on a platter, garnish with lemon wedges, and serve hot with tartar sauce or your favorite dipping sauce.
